The latest stable version of Defod is currently 1.11.1.

I would advise you to simply use the latest stable version of the engine. Each update brings useful features, so the best option is to simply use the latest release version.

There is no “best stable version”; all release versions of Defold are fairly stable and rarely contain bugs, so just use the latest one.

Also, if a new version of the engine contains breaking changes (which happens very rarely), the developers always warn you in the release notes, along with instructions on how to adapt the project to the new changes.
