I wanted to know if LuaJIT is implemented in IOS / OSX 64bits and if not, if it would be implemented in the future.

No. LuaJIT has no support for iOS 64 bit in the stable releases. There is a LuaJIT beta with that support so it will happen at some point.
The sad thing is that LuaJIT 2.1.0 has been in beta for ages. I wonder if it will ever be released…
Could you integrate luajit 2.1.0-beta3 and that the user could choose? From what I have read in luajit 2.1.0-beta3 it already supports ios64
