Would you consider good practice to have different sprite components on a go just to separate them in the Z axis? Considering these are static and will have no interaction other that being on a different depth, is it better to use a collection with multiple game objects?

I’d say that is perfectly fine.
On a separate note, I noticed this interview the other day, since Monkey Island turned 30! Haven’t watched it in full yet, but I thought others might like it.

Saw this one. It’s actually pretty cool to see what they were doing with SCUMM and how much lua really works well in the context of point and click adventure games.
