i was enjoying using lua in retro gadgets and wanted to expand what i could do, but this object based system is so different to what im used to (doing everything in code and manually drawing on the screen). i need help bridging this gap in knowledge/experience

Just tell it you’re working in defold and using lua 5.1
And ask it how to setup a project and be very detailed with the steps as you don’t know defold yet.
Have you looked at the Learn section of the Defold website? I would probably recommend that you start by doing a tutorial. For instance the Side Scroller:
