Do You have to have a Mac to create apps for IOS?
You need a Mac to make the final builds. But you can produce the app on an other OS with Defold. You can rent a Mac in the cloud to make final builds if you do not want to buy one. There are various options for cloud Mac rental which you can find searching online.
I work on Windows 99% of the time and only use my Mac for testing Mac builds / making iOS builds for example.

Okay, thanks! Will it always be that way?
It may be possible to make bundling and uploading iOS builds possible with Defold’s tools for any host OS but right now that’s not a feature and AFAIK not planned. The source is available so someone motivated could potentially make this possible.
